Creamy Sausage Gravy, Eggs, and Cheese

Ingredients
- 1 lb breakfast beef sausage
- ¼ cup all-purpose flour
- 2 ½ cups milk
- Salt and pepper to taste
- 6 large eggs
- ½ cup shredded cheddar cheese
- 1 tbsp butter
- Fresh parsley for garnish (optional)
Instructions
- Cook the sausage: In a large skillet, brown the sausage over medium heat, breaking it into small crumbles as it cooks.
- Make the gravy: Once the sausage is browned, sprinkle the flour over the sausage, stirring well to coat. Slowly add the milk, stirring constantly to create a thick gravy. Season with salt and pepper to taste. Let it simmer on low for 5-7 minutes, stirring occasionally, until thickened.
- Cook the eggs: In a separate pan, melt butter over medium heat. Crack the eggs into a bowl, whisking until fluffy, and pour them into the pan. Cook until scrambled to your desired consistency.
- Assemble the dish: Divide the scrambled eggs onto plates, top with creamy sausage gravy, and sprinkle shredded cheddar cheese on top. Let the cheese melt for a minute.
- Garnish & serve: Garnish with fresh parsley and serve hot.
