  2. Make the gravy: Once the sausage is browned, sprinkle the flour over the sausage, stirring well to coat. Slowly add the milk, stirring constantly to create a thick gravy. Season with salt and pepper to taste. Let it simmer on low for 5-7 minutes, stirring occasionally, until thickened.
  3. Cook the eggs: In a separate pan, melt butter over medium heat. Crack the eggs into a bowl, whisking until fluffy, and pour them into the pan. Cook until scrambled to your desired consistency.
  4. Assemble the dish: Divide the scrambled eggs onto plates, top with creamy sausage gravy, and sprinkle shredded cheddar cheese on top. Let the cheese melt for a minute.
  5. Garnish & serve: Garnish with fresh parsley and serve hot.
