Creamy Chipped Beef on Toast (SOS)

Ingredients
- 8 ounces chipped beef (thinly sliced)
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon black pepper
- 4 slices toasted bread
- Fresh parsley (optional, for garnish)
Instructions
- Prepare the beef:
- Rinse chipped beef under cold water to remove excess salt. Pat dry and slice into thin strips.
- Make the roux:
- In a medium skillet, melt butter over medium heat. Stir in flour and cook for 1–2 minutes until lightly golden.
- Create the gravy:
- Gradually whisk in milk, stirring constantly to prevent lumps. Cook for 3–5 minutes until mixture thickens.
- Add the beef:
- Stir in chipped beef and black pepper. Cook for an additional 2 minutes until heated through.
- Assemble the dish:
- Spoon creamy beef mixture over toasted bread slices. Garnish with parsley if desired.
