Cheesy Bacon Cheeseburger Tater Tot Casserole

A delicious twist to serve for breakfast or brunch

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook your ground beef until browned, breaking it apart as it cooks. Add the diced onion and cook for another 3-4 minutes until softened. Season with salt, pepper, and ranch seasoning.
  3. In a separate bowl, combine the cheddar cheese soup with a little water to loosen it up, then stir in half of the shredded cheddar and mozzarella cheese. Stir until it's creamy and gooey.
  4. Spread the cooked beef mixture evenly in a 9x13-inch casserole dish. Layer the tater tots on top of the beef.
  5. Pour the cheesy soup mixture over the tater tots, then top it with the remaining cheddar and mozzarella cheeses.
  6. Pop it into the oven and bake for 25-30 minutes until the tater tots are crispy and the cheese is bubbling and golden.
  7. Once it’s out of the oven, sprinkle with crumbled bacon and serve hot!
