Creamy Parmesan Italian Sausage Soup

Easy to prepare comfort soup for lunch or dinner.
Ingredients
- 1 lb Italian sausage (casings removed)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups baby spinach
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Brown the sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, crumbling it as it cooks. Drain excess fat, if needed.
- Sauté onion and garlic: Add the chopped onion and garlic to the pot and cook until soft and fragrant, about 3-4 minutes.
- Add liquids and tomatoes: Pour in the chicken broth and diced tomatoes. Stir and bring the mixture to a simmer.
- Stir in cream and cheese: Lower the heat slightly and add the heavy cream and Parmesan cheese. Stir continuously until the cheese melts and the soup thickens, about 10 minutes.
- Add spinach: Stir in baby spinach and let it wilt, cooking for another 2 minutes.
- Season and serve: Adjust the seasoning with salt and pepper. Serve hot with crusty bread or garlic bread.
