Creamy Parmesan Italian Sausage Soup

Easy to prepare comfort soup for lunch or dinner.

  1. Brown the sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, crumbling it as it cooks. Drain excess fat, if needed.
  2. Sauté onion and garlic: Add the chopped onion and garlic to the pot and cook until soft and fragrant, about 3-4 minutes.
  3. Add liquids and tomatoes: Pour in the chicken broth and diced tomatoes. Stir and bring the mixture to a simmer.
  4. Stir in cream and cheese: Lower the heat slightly and add the heavy cream and Parmesan cheese. Stir continuously until the cheese melts and the soup thickens, about 10 minutes.
  5. Add spinach: Stir in baby spinach and let it wilt, cooking for another 2 minutes.
  6. Season and serve: Adjust the seasoning with salt and pepper. Serve hot with crusty bread or garlic bread.
