Crispy Potato Cakes

Perfect side dish for breakfast or brunch.
Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- ½ cup shredded cheese (cheddar or mozzarella)
- 1 egg, beaten
- ¼ cup all-purpose flour
- 2 tablespoons chopped fresh parsley
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2–3 tablespoons vegetable oil (for frying)

- Prepare the mixture:
- In a large bowl, mix together mashed potatoes, cheese, egg, flour, parsley, garlic powder, salt, and pepper. Combine until smooth and pliable.
- Shape the cakes:
- Take a handful of the potato mixture and form it into a patty about ½ inch thick. Repeat with the rest of the mixture.
- Cook the potato cakes:
- Heat oil in a non-stick skillet over medium heat. Fry the patties in batches for 3–4 minutes on each side, or until golden brown and crispy.
- Serve and enjoy:
- Drain the cakes on paper towels and garnish with additional parsley. Serve warm with sour cream or your favorite dipping sauce.
