  3. Shape the cakes:
  4. Take a handful of the potato mixture and form it into a patty about ½ inch thick. Repeat with the rest of the mixture.
  5. Cook the potato cakes:
  6. Heat oil in a non-stick skillet over medium heat. Fry the patties in batches for 3–4 minutes on each side, or until golden brown and crispy.
  7. Serve and enjoy:
  8. Drain the cakes on paper towels and garnish with additional parsley. Serve warm with sour cream or your favorite dipping sauce.
