  1. Cook the ground beef: In a skillet over medium heat, cook the ground beef with the chopped onion until the beef is browned and fully cooked. Drain any excess grease.
  2. Prepare the slow cooker: Transfer the cooked beef and onion mixture to the slow cooker. Add the corn, black beans, diced tomatoes with green chilies, and taco seasoning mix. Stir everything together until well combined.
  3. Cook: Cover the slow cooker and cook on low for 4 hours or high for 2 hours.
  4. Add the tater tots: After the casserole has cooked, arrange the frozen tater tots on top of the casserole mixture. Cover and cook for an additional 30 minutes, or until the tater tots are golden and crispy.
  5. Top with cheese: Sprinkle the shredded cheddar cheese over the casserole and let it melt for 5-10 minutes before serving.
  6. Serve: Spoon the casserole onto plates and, if desired, serve with a dollop of sour cream for extra flavor.
