
Sweet Alabama Pecan Bread

Ingredients
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 4 large eggs
- 1 cup vegetable oil
- 2 cups self-rising flour
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- Mix the Wet Ingredients: In a large bowl, beat together the granulated sugar, brown sugar, and eggs until well combined. Add the vegetable oil and vanilla extract, mixing until smooth.
- Add the Dry Ingredients: Gradually add the self-rising flour to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the Pecans: Gently fold the chopped pecans into the batter.
- Bake: Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & Serve: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
