
Pecan Pie Cookies

A yummy dessert or after school snack for the kids
Ingredients
- 1 cup all-purpose flour
- 1/3 cup unsalted butter, softened
- 1/3 cup brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- For the filling:
- 1 cup chopped pecans
- 1/2 cup brown sugar, packed
- 1/4 cup heavy cream
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg yolk and vanilla extract, mixing until well combined.
- Gradually add the flour to the butter mixture and stir until a soft dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Use your thumb or the back of a spoon to make an indent in the center of each cookie.
- In a small saucepan, combine the brown sugar, heavy cream, and butter. Stir over medium heat until the mixture is smooth and begins to bubble. Remove from heat and stir in the vanilla extract and chopped pecans.
- Spoon a small amount of the pecan filling into the center of each cookie.
- Bake for 12-14 minutes, or until the cookies are lightly golden around the edges. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
