A classic soup recipe... perfect comfort food for lunch or dinner

  1. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Add onion, carrots, celery, and garlic. Sauté for another 5 minutes, until the vegetables are softened.
  3. Pour in the beef broth and bring to a boil. Stir in the pearl barley, thyme, and bay leaf.
  4. Reduce heat to low, cover, and simmer for about 1 hour, or until the barley is tender.
  5. Season with salt and pepper, then stir in the chopped spinach or kale until wilted.
  6. Remove the bay leaf before serving, and garnish with fresh parsley.
