What a great dessert for after lunch or dinner. Kids will love this for after school treat!

  1. Make the Crust:
  2. Preheat oven to 350°F (175°C).
  3. In a bowl, mix Oreo crumbs and melted butter until combined.
  4. Press mixture into a 9-inch pie dish and bake for 8-10 minutes (or chill for a no-bake version). Set aside to cool.
  5. Prepare the Filling:
  6. In a large bowl, beat cream cheese until smooth.
  7. Add sweetened condensed milk, vanilla pudding mix, peppermint extract, and green food coloring. Mix well.
  8. Stir in softened vanilla ice cream and mix until smooth.
  9. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the filling mixture.
  10. Gently fold in mini chocolate chips (if using).
  11. Assemble & Chill:
  12. Pour the filling into the cooled crust and smooth the top.
  13. Refrigerate for at least 4 hours (or overnight) until firm.
  14. Decorate & Serve:
  15. Top with whipped cream, green sprinkles, and maraschino cherries before serving.
