
Shamrock Mint Milkshake Pie

What a great dessert for after lunch or dinner. Kids will love this for after school treat!
Ingredients
- For the Crust:
- 2 cups Oreo cookie crumbs (or chocolate graham crackers)
- 5 tbsp unsalted butter, melted

- For the Filling:
- 1 (8 oz) block cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 ½ cups heavy whipping cream
- 1 (3.4 oz) box instant vanilla pudding mix
- ½ tsp peppermint extract
- 5-6 drops green food coloring (adjust for color)
- 1 cup vanilla ice cream, softened
- ½ cup mini chocolate chips (optional)

- For the Topping:
- 1 cup whipped cream (homemade or store-bought)
- Green sprinkles or chocolate shavings
- Maraschino cherries (optional)
Instructions
- Make the Crust:
- Preheat oven to 350°F (175°C).
- In a bowl, mix Oreo crumbs and melted butter until combined.
- Press mixture into a 9-inch pie dish and bake for 8-10 minutes (or chill for a no-bake version). Set aside to cool.
- Prepare the Filling:
- In a large bowl, beat cream cheese until smooth.
- Add sweetened condensed milk, vanilla pudding mix, peppermint extract, and green food coloring. Mix well.
- Stir in softened vanilla ice cream and mix until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form, then fold into the filling mixture.
- Gently fold in mini chocolate chips (if using).
- Assemble & Chill:
- Pour the filling into the cooled crust and smooth the top.
- Refrigerate for at least 4 hours (or overnight) until firm.
- Decorate & Serve:
- Top with whipped cream, green sprinkles, and maraschino cherries before serving.
