
Cheesy Hamburger Potato Soup

Perfect comfort soup for lunch or dinner
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced
- 4 cups beef broth
- 1 cup whole milk
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp all-purpose flour
- 2 tbsp butter
Instructions
- Cook the ground beef: In a large pot, brown ground beef over medium heat until fully cooked, breaking it apart as it cooks. Drain excess fat and set beef aside.
- Sauté vegetables: In the same pot, melt butter and add diced onion and minced garlic. Cook for 3-4 minutes until onion is softened.
- Cook potatoes: Add diced potatoes, garlic powder, onion powder, and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Thicken soup: In a small bowl, whisk together milk and flour. Gradually stir into soup and cook 5 minutes to thicken. Stir in cheddar cheese and sour cream until melted and creamy.
- Finish: Return cooked ground beef to pot and stir. Season with salt and pepper. Simmer a few more minutes to blend flavors.
- Serve: Ladle into bowls and garnish with fresh parsley or chives.
