Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ½ cup almond flour (or oat flour for a heartier texture)
- 1–2 tbsp maple syrup or honey (optional for added sweetness)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- ½ tsp baking powder
- Pinch of salt
- 1 cup grated carrots
- ¼ cup chopped walnuts or pecans (optional)

- Preheat & Prep
- Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
- Mix the Base
- In a bowl, whisk together cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth. Add almond flour, baking powder, cinnamon, nutmeg, and salt. Stir until fully combined.

- Fold in grated carrots and chopped nuts until evenly distributed.
