Ingredients
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 large egg
- 3/4 cup buttermilk
- 1/4 cup finely chopped onion
- 1/4 tsp garlic powder
- 1 tsp baking powder
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp salt
- Oil for frying
Instructions
- Mix the Batter:
- In a bowl, whisk together cornmeal, flour, baking powder, salt, and garlic powder. Stir in the chopped onion.
- Combine Wet Ingredients:
- In a separate bowl, beat the egg and mix it with buttermilk. Slowly pour this mixture into the dry ingredients. Stir until combined but do not overmix.
- Heat the Oil:
- Heat oil in a deep fryer or large skillet to 350°F (175°C). Use enough oil to submerge the hush puppies.
- Shape and Fry:
- Use a spoon or ice cream scoop to drop small balls of batter into the hot oil. Fry for 2-3 minutes or until golden brown, turning occasionally for even cooking.
- Drain and Serve:
- Remove hush puppies with a slotted spoon and place on paper towels to drain excess oil. Garnish with fresh parsley and serve warm with your favorite dipping sauce.
